Some nights don’t call for anything fancy. They call for something simple, filling, and dependable. This is one of those suppers I come back to again and again. It’s forgiving, uses what you have on hand, and doesn’t leave you with a sink full of dishes.
It’s the kind of meal you can throw together without much thought, which is exactly what makes it worth keeping.
What You’ll Need
2 smoked sausages, cut into bite-size pieces
1 bag frozen broccoli
Diced potatoes
I use a bag I’ve blanched and frozen from the garden
Store-bought country-style potatoes work just fine too
Olive oil
Salt (I like to use Smoked Salts from Smokehouse Seven)
Pepper
Paprika
Garlic powder
Onion powder
How to Make It
Chop broccoli into bite-size pieces if needed.
Cut your meat into chunks.
Spread everything out on a parchment-lined sheet pan.
Drizzle with olive oil.
Sprinkle generously with seasonings.
Bake at 400° for 20–25 minutes, until the meat is cooked through and the vegetables are tender.
Give it a stir halfway through if you think about it. If not, it’ll still turn out just fine.
Make It Your Own
This isn’t a recipe you have to follow to the letter. It’s more of a framework.
Swap the sausage for venison, beef, chicken, or pork
Use whatever vegetables are in season
Asparagus works especially well in the spring
Adjust the seasonings to your taste
Add more or less of anything depending on who you’re feeding
That’s how real cooking tends to go anyway.
A Simple Supper Worth Keeping
There’s something good about meals like this. No fuss, no special ingredients, just honest food that fills you up and gets everyone around the table.
And if you’ve had a long day, it’s hard to beat a supper that practically cooks itself. If you try it, let me know what vegetables you use. I’m always glad to try something new.
Til next time,

HEY, I’M Megan…
My husband and I are the proud owners of Lucky Duck Acres. While we both have full-time jobs in town that sometimes make it challenging to get everything done, homesteading is all about making the most of what you have. That’s why we started this blog—to inspire you to begin your own homesteading journey from wherever you are, even if you live in town.
If you had told me five years ago that I’d own a small-town home on just half an acre, complete with ducks and rabbits, I would have laughed and called it impossible. Yet today, I can’t imagine life without our feathered and furry little family, or turning our tiny piece of land into something we truly love.
Along the way, our homesteading adventure has grown to include farmers markets. We bring our extra duck eggs to market, and I bake sourdough bread and sweet treats that often sell out before the day is over! It’s been an incredible journey, and we’re excited to see what God has in store for us next.
Because of interest from market visitors, I’ve also started offering virtual sourdough classes via Zoom—including both prerecorded lessons and live one-on-one sessions.
It’s another way to share our passion and help others bring a little homesteading magic into their own homes.
