Homemade Cream of Chicken Soup Mix

Don’t you hate it when you’re ready to cook and realize you’re missing an ingredient? Cream-of-anything soups were always one of those staples I never seemed to have enough of. That’s when I started making this homemade cream of chicken soup mix years ago. Now, I never have to worry about running out—I can just whip up a fresh batch anytime.

Ingredients:

  • 1 3/4 cups flour

  • 1 1/2 cups dry milk powder

  • 3 tablespoons crushed chicken bouillon cubes

  • 1 1/2 tablespoons onion powder

Directions:

  1. Combine all ingredients in a quart-sized mason jar and shake well to mix.

  2. To make cream of chicken soup, stir 1/2 cup of the mix into 1 1/2 cups of water. I like to start by adding a little water at a time in a saucepot until it’s smooth, then pour in the rest.

  3. Heat over medium-low until it thickens slightly.

Other Cream-of-Soup Ideas:

  • Cheddar Cheese Soup: Stir in 1/2 cup shredded cheddar cheese as the soup warms. The cheese melts perfectly, creating a rich, creamy flavor.

  • Cream of Mushroom Soup: Add chopped mushrooms while heating. I mostly stick to chicken and cheddar, so I’d encourage experimenting to find your preferred proportions.

This cheddar cheese variation is what I use in my French Bread Loaf recipe—it’s a family favorite!

My husband and I are the proud owners of Lucky Duck Acres. Along the way, our homesteading adventure has grown to include farmers markets. We bring our extra duck eggs to market, and I bake sourdough bread and sweet treats that often sell out before the day is over! It’s been an incredible journey, and we’re excited to see what God has in store for us next.

Because of interest from market visitors, I’ve also started offering virtual sourdough classes via Zoom—including both prerecorded lessons and live one-on-one sessions.

It’s another way to share our passion and help others bring a little homesteading magic into their own homes.
