When you’re dealing with food allergies and sensitivities, you start noticing just how much junk is in everyday snacks—preservatives, dyes, and things you can’t even pronounce.
So instead of fighting labels at the store, we’ve made it a habit to keep a few homemade staples on hand.
These peanut butter cup bites are one of our weekly go-tos. They’re filling enough for breakfast, easy enough for a snack, and they’ve pretty well put an end to the constant question: “What is there to eat?”
Ingredients:
2 cups quick oats
½ cup nut butter
(We make one batch with peanut butter and one with almond butter each week)
½ cup raw honey
¾ cup chocolate chips (We use the Allergen free ones)
~1 tablespoon coconut oil
Directions:
1) Warm the base
Heat the nut butter and honey just enough to combine.
(about 30 seconds works well, especially in the winter. )
2) Mix
Stir in the oats until everything is well coated.
3) Shape
Press into a mini muffin tin
Makes 24 mini bites or 12 regular size
4) Melt the chocolate
Combine chocolate chips and coconut oil and melt until smooth.
(The coconut oil is the trick it makes the chocolate spread easily and gives it a nice finish)
5) Top with chocolate
Spoon or spread chocolate over each bite.
If you've got extra, Drizzle it over something else, granola bars, toast, whatever's handy. No sense wasting good chocolate.
6) Chill
Place in the fridge until set.
7) Store
Pop out and store in an airtight container.
We keep ours in the fridge, since we don't run AC and chocolate melts fast in a warm kitchen.

My husband and I are the proud owners of Lucky Duck Acres. While we both have full-time jobs in town that sometimes make it challenging to get everything done, homesteading is all about making the most of what you have. If you had told me five years ago that I’d own a small-town home on just half an acre, complete with ducks and rabbits, I would have laughed and called it impossible. Yet today, I can’t imagine life without our feathered and furry little family, or turning our tiny piece of land into something we truly love.
Along the way, our homesteading adventure has grown to include farmers markets. We bring our extra duck eggs to market, and I bake sourdough bread and sweet treats that often sell out before the day is over! It’s been an incredible journey, and we’re excited to see what God has in store for us next.
Because of interest from market visitors, I’ve also started offering virtual sourdough classes via Zoom—including both prerecorded lessons and live one-on-one sessions.
It’s another way to share our passion and help others bring a little homesteading magic into their own homes.
