It felt like I could never buy enough granola bars for my crew—and the truth is, the ones from the store just weren’t cutting it.
They’d eat two or three and still be hungry.
Once I started making these at home, that changed. Now I make one 9x13 pan a week, and they actually last. No more constant “What else can I eat?” five minutes later.
Simple ingredients. Filling. And worth the little bit of effort.
Ingredients:
4 cups quick oats
3 cups crispy rice cereal
½ cup brown sugar
(I make mine with raw cane sugar + molasses)
½ cup raw honey
1 stick butter
2 tsp vanilla
Mini chocolate chips (allergen-free if needed)
Directions:
1) Mix the dry ingredients
In a large bowl, combine oats and crispy rice cereal.
2) Make the syrup
In a small saucepan, melt together the sugar, honey, butter, and vanilla.
Bring to a boil and let boil for 2 minutes.
3) Combine
Pour over the Oat mixture and stir until everything is well coated.
4) Press
Press firmly into a parchment-lined 9x13 pan.
(Don't be shy here - pressing well is what helps them hold together.)
5) Add chocolate chips
Sprinkle mini chocolate chips over the top - just a light layer does the trick.
If you've got leftover melted chocolate from your peanut butter cup bites, drizzle it over the top. It looks good and tastes even better.
6) Chill
Refrigerate for a few hours or overnight for best results.
7) Cut & Store
Slice into bars (about 1x3 inches works well) and store in an airtight container.
We keep ours in the fridge since we don't run AC, but they can be stored however works best for your household.

Along the way, our homesteading adventure has grown to include farmers markets. We bring our extra duck eggs to market, and I bake sourdough bread and sweet treats that often sell out before the day is over! It’s been an incredible journey, and we’re excited to see what God has in store for us next.
Because of interest from market visitors, I’ve also started offering virtual sourdough classes via Zoom—including both prerecorded lessons and live one-on-one sessions.
It’s another way to share our passion and help others bring a little homesteading magic into their own homes.
